This chain has chosen addresses for its third and fourth Wichita restaurants
A small New Mexico-based Mexican restaurant chain that entered the Wichita market last year is about to open a third location — and a fourth could be ready by December.
Birria Estilo Zacatecas owner Jose Luis Lopez, who opened his first Wichita restaurant in November at 2119 W. 21st St. then added a second in April at 1210 W. Pawnee, has signed a lease on the former Dairy Queen building at 9310 W. Central. He hopes to have the restaurant open by Sept. 1, he said.
The space most recently was leased by J&A’s Flavored Kitchen but has been home to a number of short-lived restaurants since the Dairy Queen closed a decade ago, including Connekt Cafe, Vita Bella, El Ricardo’s Mexican Food and Rene’s Restaurant.
Birria Estilo Zacatecas is not done with Wichita, either. Lopez plans to open at least two more restaurants here, he said. The next one should be ready to go in December at 1520 S. Webb Road.
Lopez started his business as a food truck in Albuquerque in 2020, but it broke down, so he opened a brick-and-mortar restaurant. He’s been expanding ever since and decided to enter the Wichita market after visiting family here. He now has seven restaurants total.
The focus is on Zacatecas-style birria, which is a slow-cooked beef stew that originated in the Mexican state of Zacatecas, in north-central Mexico. There, the dish is often served on special occasions.
