Updates on the next two chain restaurants set to open in Derby
Derby: It’s where the popular restaurant chains want to be. The near-Wichita town got both a 7 Brew and a Ziggi’s Coffee in January and a Culver’s in December. Breakfast chain The Big Biscuit also has plans for Derby: The Kansas-City based-breakfast chain is taking over the old IHOP space at 1906 N. Rock Road. A spokesperson for The Big Biscuit said this week that he didn’t have any new information on an opening date for that restaurant but has previously said it wouldn’t be before the second half of 2026.
Now, there are updates on two other impending chain restaurant openings in Derby. Here’s the latest:
Andy’s Frozen Custard, 2330 N. Rock Road: Derby’s new Andy’s Frozen Custard should open in about a week near The SandBox and 7 Brew Coffee. A spokesperson said this week that the store is targeting May 20 and said he’d share grand opening details as they were confirmed.
This will be the fourth Wichita-area location for Andy’s, a chain based in Springfield, Missouri, whose menu offers fresh-made frozen custard served in cones, concretes, sundaes, malts, shakes and floats from a walk-up window and from a drive-through. Its other locations are at 10788 W. 21st St., 3425 E. Douglas and 9750 E. 21st St., all in Wichita.
Chicken Salad Chick, 2600 N. Rock Road: In December, the chain said that its Derby store should be open by mid-May, which is rapidly approaching. But this week, a spokesperson said that late June or early July is more realistic. The chain entered the market in December with a restaurant at 10240 W. 29th St. North in Wichita.
Based in Atlanta and popular with Gen-Z and millennials, the chain’s restaurants serve chicken salad in flavors like traditional, savory, fruity and nutty and spicy. The Derby restaurant is taking over the space where an AT&T store previously operated.
