Brunch restaurant known for colorful mimosa flights opens in northwest Wichita
A new brunch restaurant has just opened in Northwest Wichita.
Monday was opening day for Wichita’s third location of The Easy Egg, a breakfast-and-lunch restaurant owned by Eduardo Gonzales, who also has restaurants at 5700 W. Kellogg and at 3130 N. Rock Road.
Gonzales said back in April that he was taking over the former Chick N Max space at 3520 N. Maize Road and would add yet another restaurant there. It’s now open and features modern tiles, booth seating, plant walls and neon signage.
The new location has the same menu of breakfast and lunch specialties as the other two restaurants, where chilaquiles remain the most popular dish, Gonzalez said. The Easy Egg is also known for its colorful mimosa flights.
The menu also features lots of unique Benedicts, waffles, pancakes, skillets, breakfast sandwiches and breakfast combos. It even serves French toast made with a Mexican concha. Many of the dishes on the menu have a Mexican influence.
The hours for the new restaurant are 7 a.m. to 2:30 p.m. daily.
Gonzalez started The Easy Egg at 240 N. Main in Haysville in 2019. Two years later, he moved the restaurant to Wichita, saying he wasn’t busy enough during the week in Haysville.
His first Wichita restaurant opened in the former Denny’s building on West Kellogg in August 2021, then in the spring of 2024, he added the Rock Road restaurant in a space formerly occupied by Mr. Miyagi Japanese Grill.
