A new breakfast restaurant will soon open on an already breakfast-y section of Rock Road

An already busy block on North Rock Road is about to become even busier — especially at breakfast and brunch time.

The owner of The Easy Egg, which has operated inside the former Denny’s building at 5700 W. Kellogg since August 2021, is adding a second location.

He’s taking over the space at 3130 N. Rock Road that Mr. Miyagi Japanese Grill vacated in November. Not only does the space sit right next door to the newly remodeled LaMar’s Donuts & Coffee, but it’s across the street from Jimmie’s Diner, 3111 N. Rock Road, and on the same block as the IHOP at 3151 N. Rock Road.

Owner Eduardo Gonzalez said he kept hearing from other restaurant owner friends that the east side was the place to be, so he decided to expand his business. He needs to add kitchen equipment and furniture to the empty space and he wants to give it a fresh coat of paint and a deep clean, but he’s hoping to have it open by mid-March, he said.

Business has been good on West Kellogg, Gonzaelz said, and that restaurant will remain open. The east-side location will serve the same menu as the west side, where dishes like chilaquiles, banana bread French toast and jalapeno omelets have been popular.

The restaurant, which will be open just for breakfast and lunch, will also offer mimosa flights, which have gone over well on West Kellogg.

Gonzalez started The Easy Egg at 240 N. Main in Haysville in 2019. Two years later, he moved the restaurant to Wichita, saying he wasn’t busy enough during the week.

Alex Ibarra of Weigand Commercial Real Estate represented The Easy Egg on the North Rock Road deal, and Michael Malone of ICT Capital represented the landlord.
