New Bradley Fair restaurant has just opened with live-fire cooking, ‘food from here’

A new restaurant opened Monday in Bradley Fair serving dishes made with locally sourced products.

But the owners — Nick Korbee and wife Amanda Luginbill — don’t call their food “farm to table.” They prefer the term “food from here.”

First Mile Kitchen, the first of two planned Wichita businesses by Korbee and Luginbill, has taken over the former Good Egg space in the northeast corner of Bradley Fair, the shopping center at 21st and Rock. The restaurant is on the back side of the shopping center, east of YaYa’s Eurobistro.

Although the restaurant is open for breakfast, lunch and dinner, the owners are asking people for now to make reservations at www.firstmilekitchen.com before they come. The reservation policy will likely continue for about 10 days, Korbee said, though First Mile is reserving limited space for walk-in customers.

First Mile Kitchen doesn’t look anything like The Good Egg and features modern finishes, a wooden bar, a fireplace and Windsor-style chairs. The kitchen is fitted with a “live-fire hearth” for grilling and cooking.

Executive chef James McBride created two different menus — one for daytime and one for evening.

For now, First Mile is serving coffee plus pastries like apple rye crumb muffin, pistachio danish and dill Havarti scone from 7 a.m. to 10 a.m. Soon, they’ll start offering the full daytime menu at 7 a.m, thought for now, it’s available from 10 a.m. to 3 p.m. and includes brunch and lunch items including things like a breakfast burrito made with smoke brisket, an egg sandwich on croissant, malt pancakes, various salads, a burger, and an “extra fancy grilled cheese” made on seeded sourdough with apple butter, Havarti and colby jack cheeses, arugula and pear.

From 3 to 5 p.m., people can order from a “snacks” menu that includes appetizer items like ricotta toast, brisket croquetas and fried sweet potato. Dinner service starts at 5 p.m. and runs until 10 p.m. weekdays and 11 p.m. on weekends. It includes shareable sides and entrees of pasta, chicken, salmon and various steaks. First Mile also offers several craft cocktails plus beer and wine starting daily at 10 a.m.

Korbee, an Ohio native, opened a restaurant called Egg Shop in New York City’s Soho neighborhood in 2014. It has an egg-centric menu created with locally sourced ingredients and was popular enough that the partners added a second location in Brooklyn in 2017. Korbee went on to write “Egg Shop: The Cookbook,” a book full of egg recipes and cooking techniques that has a comic flair.

He moved with Luginbill, a Newton native, to Wichita in early 2020.

The couple also is working on opening First Mile Cantine on the ground floor of Fidelity Bank’s new RISE Car Park at 320 N. Market. They hope to have it open by spring.
