Cook coughed on hands. Flies. Old hot dogs. Wichita KS restaurant, hotel inspections
Ten restaurants, grocery stores and other businesses in Wichita and surrounding towns were out of compliance during food safety and lodging inspections conducted by the Kansas Department of Agriculture from Aug. 18-24.
They were cited for a number of violations, including employees who touched customer food with their bare hands, a cook who coughed on their hands but didn’t wash or change gloves afterward, flies landing on surfaces that touch food, leaky and non-functioning sinks, dishes that weren’t sanitized, old hot dogs and deli ham, greasy ladles and more, according to inspection reports.
Information about the food establishments and hotels and motels, as well as a summary of their violations, appears below. All of the businesses listed are in Sedgwick County. The list was compiled on Aug. 27.
More than 50 establishments passed inspections during that same time. A list of those also appears below. Some may have been non-compliant in previous weeks.

Out of compliance inspections
Braum’s Ice Cream & Dairy Store, 444 E. Pawnee in Wichita - Three violations on Aug. 21 during a complaint inspection. The restaurant didn’t note the time cheese and vegetables were removed from refrigeration, sanitizer was stored above food on a shelf, “approximately 20 flies landing” on surfaces that touch food in the ice cream preparation area. Next inspection: Aug. 31.
Dillons, 3932 W. 13th St. in Wichita - Two violations on Aug. 20 during a follow-up inspection. Flies around a sink and clean knives, flies around floor drain, glue trap covered in dead flies by drain, glue trap half covered in dead flies under a preparation sink. Next inspection: Aug. 30.
The Grill, 222 N. Second Ave. in Mulvane - Eight violations on Aug. 20 during a routine inspection. An employee was touching ready-to-eat lettuce with their bare hands, chipped spatula, sliced cheese and tomatoes weren’t kept cold enough, old hot dogs and deli ham, leaky sink in kitchen, bucket of sanitizer was stored next to bread and butter, bottle of sanitizer wasn’t labeled, no hot water at kitchen hand-washing sink. Next inspection: Aug. 30.
La Hacienda Tacos & Tequila, 5905 W. Kellogg Drive in Wichita - Eleven violations on Aug. 19 during a routine inspection. An employee didn’t wash hands before putting on gloves, vegetables and cheese weren’t cold enough in a refrigerated preparation table, scoops without handles were stored in containers of seasonings and flour, no water under pressure at hand-washing sink by grill, containers of dry seasonings weren’t covered with lids to protect them from contamination, wrong preparation date written on a container of cooked chicken, sanitizer in dish machine wasn’t working, no paper towels at several sinks, no test strips for quaternary sanitizer on site, no soap at hand-washing sink by front door, employee touched lettuce with their bare hands. Next inspection: Aug. 29.
Mexico Viejo Mexican Restaurant, 6960 W. 21st St. in Wichita - Four violations on Aug. 23 during a follow-up inspection. Cook touched raw chicken and raw steak then handled a clean plate without washing hands or changing gloves, tomato slices were touching raw beef, hamburger patties weren’t cold enough in a refrigerated preparation table, employees washed their hands in a sink dedicated to food preparation. Next inspection: Oct. 22.
Oak & Pie, 2244 N. Greenwich, Suite 900 in Wichita - Seven violations on Aug. 20 during a routine inspection. Plastic pans in clean storage had sticker residue on them, greasy ladles in clean storage, dented cans of tomatoes, soup and sauces weren’t kept hot enough in hot holding, a cook coughed in his hands then touched croutons without changing gloves or washing hands, milk wasn’t cold enough in reach-in cooler, butter wasn’t labeled with the time it was removed from refrigeration, dish machine wasn’t sanitizing dishes. Next inspection: Aug. 30.
Paris Banh Mi, 2350 N. Greenwich, Suite 110 in Wichita - Four violations on Aug. 21 during its first operational inspection after licensing. Water at the three-compartment sink didn’t get hot enough, gallon of milk wasn’t labeled with its opening date, cheesecake wasn’t labeled with the date it was removed from the freezer, certain containers weren’t lined with food-safe lining, packages of beef jerky and chili mango weren’t labeled, packages of bread weren’t labeled in English. The business was in compliance during a follow-up inspection on Aug. 23.
Sonic Drive-In, 1414 E. Grand in Haysville - One violation on Aug. 20 during a routine inspection. Cheeses and hot dogs weren’t kept cold enough. Next inspection: Aug. 30.
Supplement World, 1535 S. Oliver in Wichita - One violation on Aug. 21 during a follow-up inspection. Water at a warewashing sink didn’t get hot enough. Next inspection: Oct. 30.
Wingstop, 7809 E. Harry in Wichita - One violation on Aug. 19 during a routine inspection. Nacho cheese in dispenser wasn’t kept hot enough overnight. Next inspection: Aug. 29.
How do businesses fail inspections?
Businesses fall out of compliance when they have too many violations, issues that can cause a foodborne illness, when a problem can’t be fixed right away, such as bug and rodent infestations, and more. But most violations are minor and are corrected while an inspection is taking place.
Typically, establishments are reinspected within 10 days to ensure they are following the rules.
It’s rare for a business to shut down over a failed inspection. But it can happen. Usually, closures are temporary, voluntary and due to major problems, such as sewage backups, pest infestations, and water or power outages.
