Restaurants, butcher, hotel in Wichita area fail over old food, water issues & more
Four restaurants, a butcher shop and a hotel in and around Wichita were out of compliance during Kansas Department of Agriculture food safety and lodging inspections conducted July 9-15.
Information about the Sedgwick County businesses and their violations appears below in an alphabetical list with a summary of the problems inspectors found. More details are posted in The Eagle’s searchable database of non-compliant restaurant and hotel inspections at www.kansas.com/databases. This list was compiled July 20.
More than 50 establishments passed inspections with few or no violations last week. Those appear alphabetically below. Some may have been on a prior non-compliant list.

How establishments fail
Most violations are minor and are corrected during an inspection.
Businesses fall out of compliance when they have too many violations, issues that can cause foodborne illnesses or when a problem can’t be fixed right away, like bug and rodent infestations.
It’s rare for an establishment to shut down over a failed inspection, but it can happen if there are issues such as sewage backups and ongoing or untreated pest problems, or if a business operates without water, power or refrigeration. Usually closures are temporary.
When an establishment fails, it’s typically inspected again within 10 days.

Out-of-compliance inspections
Andy’s Frozen Custard, 9750 E. 21st St. in Wichita — One violation on July 11 during its first operational inspection after licensing. Cited for not having a probe-style food thermometer. Next inspection: July 21.
Chester’s Chophouse & Wine Bar, 1500 N. Webb in Wichita — Ten violations on July 13 during a routine inspection. Cited over discolored cutting board, raw filet mignon steak stored above containers of pineapple and broccoli in refrigeration, cooked mashed potatoes weren’t cooling off quickly enough, no soap at hand-washing sink near cook line, cold water was turned off at hand-washing sink near cook line and hot water was turned off to the 3-vat sink in dish area, butter and tomato juice were sitting out at room temperature, refrigerated foods including potatoes and pepperoni were not temperature compliant, cooked mushrooms were not labeled with preparation date, several old cheeses and sauces, dirty can opener, hot water was turned off at preparation sink hand-washing sink. Next inspection: July 23.
Doma, 7703 E. Douglas in Wichita — Seven violations on July 11 during a routine inspection. Cited over an unlabeled bottle of sanitizer, containers of whipped cream were not labeled with opening dates, chicken wasn’t kept hot enough, items in refrigerated preparation table including hummus and kimchi slaw weren’t cold enough, old pork belly, employee ate then handled customer food without changing gloves or washing hands, restaurant had no disclaimer posted about steaks and burgers that are cooked to order. Next inspection: July 21.
Economy Hotel, 550 S. Florence in Wichita — Four violations on July 13 during a licensing inspection. Cited for not having an evacuation diagram in two rooms, no ice bucket liners in two rooms, stained carpet in a room, laundry room with gas-powered dryer does not have a carbon monoxide detector. Next inspection: July 23.
Jacky Chan Sushi, 7820 E. Harry in Wichita — Two violations on July 14 during a complaint inspection. Cited because it does not have a parasite destruction letter on site and because rice wasn’t labeled with its preparation time. Next inspection: July 24.
Sig’s Gourmet Butcher Shop, 300 S. Baltimore in Derby — One violation on July 10 during a routine inspection. Cited over missing logs related to curing. Next inspection: July 20.
