Wichita inspections: Old ribs, roaches, mice, meat in stagnant water, spoiled sauce

Fourteen businesses including several restaurants, motels and a supermarket failed their Kansas Department of Agriculture food and lodging safety inspections between Jan. 16 and Feb. 5, a check of Sedgwick County inspections shows.

Information about the businesses and violations, compiled Feb. 10, appears below with a summary of the problems inspectors noted on their reports. More details, including specific violation descriptions and survey dates, are posted in The Eagle’s searchable database of non-compliant restaurant and hotel inspections at www.kansas.com/databases.

More than 120 businesses surveyed during that time frame passed their inspections with few or no violations. You can see those at www.foodsafety.kda.ks.gov/FoodSafety/Web/Inspection/PublicInspectionSearch.aspx.

Failing an inspection doesn’t necessarily mean a business has to close; that’s rare. Most violations are minor and are immediately corrected on site.

Businesses fall out of compliance with state rules when they have too many violations or certain types of problems that can increase the risk of a customer contracting a food-borne illness, or when a problem can’t be fixed right away, such as plumbing issues and pest infestations.

When a business fails, it’s usually inspected again within 10 days.

Recent out-of-compliance inspections

B&C Barbeque, 355 N. Washington in Wichita — Five violations on Feb. 1. They include storing raw eggs above bologna in cooler, old beef ribs and prime rib, chipped spatulas, water not hot at bathroom sinks, unlabeled chemical bottles. Next inspection date wasn’t listed.

Best Western Plus Wichita West, 3800 W. Kellogg Dr. in Wichita — Six violations on Jan. 26. They include unlabeled chemical bottles, missing or water-damaged tiles, broken emergency lights, broken smoke detector, not testing smoke detectors or carbon monoxide detectors for at least six months. Follow-up inspection: Feb. 6.

The Bunnery, 1025 W. 29th St. N. in Wichita — One violation on Jan. 20 over its use of shredded cheddar cheese on baked bread. The company is supposed to obtain an evaluation to determine whether any risk exists treating the bread as a shelf-stable product. Next inspection: Feb. 19.

Circle Greenwich Elementary, 3250 N. Greenwich Rd. in Wichita — Two violations on Jan. 31 for not keeping tater tots hot enough to serve safely and not keeping refrigerated items cold enough. Next inspection: Feb. 10.

El Rancho Restaurant, 1601 E. Pawnee in Wichita — Five violations on Feb. 4. They include storing cooked tomatillos at room temperature, old salsa and beans, sink draining directly onto kitchen floor, no soap at bathroom sink, unlabeled chemical bottle. Next inspection: Feb. 14.

El Rio Bravo Supermarket, 2501 S. Seneca in Wichita — Fifteen violations on Feb. 4. They include moldy tortilla shells for sale, tortillas and breads not labeled with ingredient or allergen information, dented hominy and jalapeno cans, not keeping shell stock tags for mussels for required time, storing raw meat above cooked meats in refrigerator, thawing meats in stagnant water, cooked vegetables and tamales not kept hot enough to consume safely, old cheese, dirty cutting board, not sanitizing dishes, plumbing issue, storing bathroom cleaner above salt canisters. Next inspection: Feb. 14.

Emperor’s Japanese Grill, 2250 N. Ridge Rd., Ste. 200 in Wichita — Seven violations on Feb. 3. They include “an unknown black substance mixed with the sugar in the bulk sugar bin,” storing raw shrimp above other foods in refrigerator, not storing cooked chicken at safe temperatures, chicken and salad dressing not marked with preparation dates, rice not labeled with preparation time, digital food thermometers don’t work, no equipment for testing strength of sanitizer in dishwasher. Next inspection: Feb. 13.

Extended Stay America Wichita East, 9450 E. Corporate Hills Dr. in Wichita — Two violations on Jan. 18 for broken emergency lighting and pest infestations in some rooms. At a follow-up inspection on Feb. 1, an inspector found bedbugs. Next inspection: Feb. 11.

Mark 8 Inn, 1130 N. Broadway in Wichita — Five violations on Jan. 26. They include missing window screen, broken emergency lights and smoke alarm, roaches, renting room with pest infestation. Next inspection: March 26.

Nortons Brewing Company, 125 N. St. Francis in Wichita — One violation on Jan. 26 for using not sanitizing used kegs with an approved chemical. Follow-up inspection: Feb. 5.

Siena Tuscan Steakhouse, 104 S. Broadway in Wichita — Seven violations on Jan. 27. They include an employee not washing hands after touching dirty dishes, cook touching food ready for customers with bare hands, butter stored at room temperature, old salsa verde and short ribs, cooking chicken with sous vide process without approval, no paper towels at bar sink, prepared-to-order and raw-egg items not labeled with consumer advisory. Follow-up inspection: Feb. 6.

Sprouts Farmers Market, 7729 E. Central in Wichita — Four violations on Jan. 24. They include storing raw chicken kabobs above raw beef, old gravy, hummus not labeled with opening date, plumbing issue. Follow-up inspection: Feb. 3.

Supplement World, 1535 S. Oliver in Wichita — Two violations on Feb. 1 for not having equipment on site to test the strength of dish sanitizer and not having hot water at sink. Next inspection: Feb. 11.

Ziggy’s Pizza East, 12115 E. 21st St. N. in Wichita — Four violations on Jan. 26. They include swollen jugs of barbecue sauce that might be spoiled, dirty vegetable dicer, mice, unlabeled chemical bottle. Next inspection: Feb. 5.
