Wichita inspections: Old pudding, no sanitizer, no water, dirty dicer, sugar on floor

A pizza joint, a doughnut shop, a sports bar and grill, a steakhouse and a local coffee roasting business failed their Kansas Department of Agriculture food and lodging safety inspections last week. They were cited for violations including not keeping cold foods cold enough and hot foods warm enough, storing sugar and flour sacks directly on the floor, dirty equipment, missing or inadequate sanitizer levels for cleaning dishes, an employee who didn’t wash their hands after touching money, a missing sink faucet handle and old cheeses and bread pudding, a check of Sedgwick County’s non-compliant inspections from Dec. 26 to Jan. 1 shows.

Information about the five businesses and violations, compiled Jan. 2, appears below with a summary of the problems inspectors noted on their reports. More than 40 businesses surveyed over the past few weeks passed their inspections with few or no violations. You can see those at www.foodsafety.kda.ks.gov/FoodSafety/Web/Inspection/PublicInspectionSearch.aspx.

Failing an inspection doesn’t necessarily mean a business has to close; that’s rare. Most violations are minor and are immediately corrected on site.

Businesses fall out of compliance with state rules when they have too many violations or certain types of problems that can increase the risk of a customer contracting a food-borne illness, or when a problem can’t be fixed right away, such as plumbing issues and pest infestations.

When a business fails an inspection, it’s usually inspected again within 10 days.

Recent out-of-compliance inspections

Cici’s Pizza, 8320 W. Central in Wichita — Two violations for not cooling macaroni and cheese sauce quickly enough, refrigerated foods including salad mix and pasta salad weren’t kept cold enough. Next inspection: Feb. 27.

Derby Donut, 1710 E. Madison, Ste. 300 in Derby — Six violations for employee not washing hands after handling cash, raw eggs stored above ready-to-eat sausage in cooler, storing scoops with no handles directly in flour and sugar, open packages of flour and sugar stored on floor, no hot water at sink because faucet handle is missing, dirty floor and food preparation tables. Next inspection: Feb. 27.

Emerson Biggins, 2330 N. Maize Road, Ste. 100 in Wichita — Six violations for not keeping french fries hot enough, not storing refrigerated foods at cold enough temperatures, cottage cheese container not labeled with opening date, no equipment to test strength of sanitizer, dirty tomato dicer, plumbing issue. Next inspection: Jan. 9.

The Sweet Spot, 8448 W. Central in Wichita — Eleven violations for employee not washing hands, not storing refrigerated foods at cold-enough temperatures, containers of baked potatoes and pasta aren’t labeled with preparation dates, old cheeses and bread pudding, pork chop packages not marked with preparation dates, no warning on menu advising of risk of consuming undercooked foods, missing thermometer, no sanitizer in dishwasher, dirty potato dicer, water in dishwasher wasn’t hot enough. Next inspection: Feb. 27.

Wichita Coffee Roasteries Inc., 4428 W. 29th Circle South in Wichita — One violation for inadequate sanitizing. Next inspection: Feb. 26.
