Upscale Wichita restaurant creates sister concept offering more affordable fare
Upscale Peruvian restaurant Lima Nation opened in January 2024 in the former Lola’s Bistro space serving upscale dishes prepared by a chef who attended culinary school in Peru.
Since then, the restaurant, which is at 2146 Collective Lane, has gained a following of local fans who love its empanadas, lomo saltado and chicken causa.
But the owners recently decided that they wanted to find a way to reach customers who were less interested in upscale dining. They settled on a novel idea: selling Peruvian street food out of a “ghost kitchen” based in their restaurant.
Earlier this month, the owners introduced The Daily Deli. It operates from Lima Nation’s kitchen and serves the type of sandwiches frequently made by Peruvian street vendors. The main menu item is the restaurant’s take on the popular pan con chicharron sandwich. Lima Nation’s version is called the Peruvian Pork Legend and is served on a French roll that’s filled with crispy pork belly and topped with sweet potato chips, house-made mayonnaise and Peruvian salsa.
The menu also includes also the Butifarra sandwich, made with slow-cooked pork shoulder; the Abuela Roast sandwich, made with slow-braised beef roast and topped with melted gouda, avocado and criolla salsa.; and the Brasa chicken sandwich featuring marinated rotisserie chicken lettuce, tomato, shoestring fries and tartar sauce.
“Even though it was not our main idea, the restaurant has the reputation of being a high-end concept,” said Karo Barreda, the restaurant’s co-owner and wife of its chef, Carlos Barreda. “This street food concept is really not expensive. It’s really affordable.”
The Daily Deli sandwiches (called “sanguches” in Peru) are available for takeout and for delivery by third party services DoorDash, Uber Eats and Grubhub. For now, dine-in customers also can order the sandwiches, but the owners aren’t sure if that will continue.
The Daily Deli menu also offers a few more-familiar sandwiches, including a daily burger and a crispy chicken club. It also includes fries, mashed potato and coleslaw as sides.
The chef makes his own mayonnaise and bakes his own Peruvian-style French rolls for the sandwiches.
“We are so happy that the people who have tried them have really, really enjoyed the sandwiches,” Karo Barreda said. “It’s another way to introduce Peruvian food into the community.”
The sandwiches range from $12.99 to $14.99, and sides are $2.99.
They are available to try, order or pick up during the same hours that Lima Nation is open: from 11 a.m. to 2:30 p.m. and from 5 to 9 p.m. Tuesdays through Saturdays, and from 11 a.m. to 6 p.m. Sundays. Lima Nation and The Daily Deli are closed on Mondays.
