National cookie chain known for late-night delivery is coming to Wichita

The food kiosks on the plaza at downtown Wichita’s Union Station have been vacant for some time.

But by the end of the year, the kiosks — which were built as four separate units back in 2016 — will be remodeled into one big space and taken over by a national cookie chain.

Insomnia Cookies, which has more than 200 stores across the country, should be open there by the end of 2023, said Charlie King, the sales and leasing manager for Occidental Management, which owns the kiosks. Construction will start soon, and when completed, the space will have 1,200 square feet.

Insomnia Cookies specializes in fresh-baked cookies, brownies, cookie cakes and ice cream, and it’s known for delivering fresh, warm cookies to individuals and businesses. Most stores deliver until 3 a.m. Customers with “Cookie Magic” subscriptions can get one free cookie a day and free delivery.

The Wichita space will have room for customers to come inside and order as well as lots of outdoor seating out front, King said.

Insomnia Cookies was founded in a University of Pennsylvania dorm room in 2003 by then-student Seth Berkowitz. Cookies come in flavors like berries ‘n cream, pina colada, red velvet, limoncello, chocolate chunk, peanut butter chip and more. The shop also sells vegan cookies.

Insomnia Cookies also has locations in Manhattan and in Westport and the Power & Light District in Kansas City.

Over the years, the Union Station kiosks have seen many businesses come and go, including The Dapper Doughnut, Noodles to Go, 8 Below and Funky Monkeys Shaved Ice 21+.

The last businesses operating there were Wichita Cheesecake Company, which moved out in summer 2021 and took over the old Scooter’s space at Douglas and Rock Island, and Sweet House, which sold bubble waffles and closed in the fall of 2021
