The bustling area near Central and Hillside is about to get another restaurant tenant.

Las Vegas transplant Ana Gutierrez and her cousin recently signed a deal to take over the space at 410 N. Hillside where the first Chick N Max operated until it moved to West Street in October 2019. Their plan is to open a new Mexican restaurant there called El Capitan Seafood & Grill, and they plan to have it ready by the second week of September.

Gutierrez, who worked at restaurants in Las Vegas for 15 years, said she relocated to Wichita, where she has a sister, a few months ago. She looked at different spaces before settling on the Central and Hillside spot, which she liked because of its proximity to Wesley Medical Center.

The restaurant will be open from 10 a.m. to 10 p.m. and will have a menu that offers things like fajitas, burritos, molcajetes and a carne asada plate. The seafood options will include seafood cocktails, aguachiles, ceviche, oysters and more.

El Capitan will be full service and will serve beer and micheladas, Gutierrez said.

The space, which chef Bill Crites briefly planned to take over and open a quesadilla restaurant, is in good shape from its Chick N Max days and doesn’t need much work, Gutierrez said.
