Anticipated new Wichita restaurant won’t be ready to open this weekend after all
If you penciled in the opening date of Doma, the new restaurant opening in the old Carlos O’Kelly’s building outside of Towne East Square, you’ll need to locate an eraser.
The restaurant’s originally announced opening date of Jan. 15, which is Saturday, is being pushed back because too many members of the new serving staff are down with COVID-19, said executive chef Joseph Castillo.
The tentative new opening date is Jan. 25, which is a Tuesday.
Doma, owned by developer Max Cole, has taken over the 13,000-square-foot building at 7703 E. Douglas where Carlos O’Kelly’s operated from 2002 until it closed in 2017. Major interior and exterior remodeling work has been underway for months.
The restaurant, which will focus on shareable small plates and craft cocktails, will be run by a trio of men who built their careers in California and Arizona: executive chef Castillo, operating partner Stephen Dean and general manager Tom Williamson.
The massive space will feature an upscale dining room and bar as well as a unique indoor/outdoor lounge and a dog-friendly patio.
