It’s one of Wichita’s most popular breakfast and lunch spots, but soon, it’ll add dinner
It’s one of Wichita’s most popular and well-known restaurants — and the fact that it hasn’t stayed open past 2 p.m. during its seven years of business hasn’t hurt its status one bit.
But will staying open past 2 p.m. help it become even more popular?
The owners of Doo-Dah Diner at 206 E. Kellogg plan to find out next month when they expand the restaurant’s hours into the evening Tuesdays through Fridays.
The plan, said owner Timirie Shibley, is to start the new hours on April 1. After that, Doo-Dah Diner will remain open until 7 p.m. Tuesdays through Fridays.
“We’re just really in a position to be able to do it, and there’s so much happening in downtown, and so many people have said they wished we would be open for dinner,” she said.
The menu will remain the same. After some internal debate, Timirie and her chef/husband Patrick Shibley decided they’d serve the full menu into the evening, including all the diner’s favorite breakfast dishes — (though Timirie expressed a secret desire that evening crowds would dive into the sandwich and burger sections of the menu, too.)
The Shibleys have long wanted to open for dinner, and when they’ve experimented with evening hours — opening once a year for a special Fat Tuesday dinner or for the occasional fried chicken night — the crowds have been huge.
There’s a demand, they believe, and the demand might only grow as downtown becomes a more active place.
“With baseball and everything else happening, it’s just a natural segue,” she said.
For now, the Shibleys are working on hiring staff to cover the later shifts. Once they start with dinner, the diner’s hours will be 7 a.m. to 7 p.m. Tuesdays through Fridays and 8 a.m. to 2 p.m. Saturdays and Sundays.
