Dirty meat slicer, sanitizer issue, wrong sink used at Wichita KS food businesses

Two Wichita-area businesses that serve or sell food to the public were out of compliance with state regulations when they were inspected by the Kansas Department of Agriculture from June 1-7.

Inspectors found few or no violations at more than 40 other locations deemed compliant with food safety and lodging rules.

Inspections are meant to protect the public from foodborne illnesses and other health risks. Locations can fail if they have too many problems, certain types of violations or issues that can’t be fixed right away. Violations are common. But most of the time, businesses correct issues in front of an inspector.

Examples of things that can be addressed immediately are serving food that’s more than a week old, employees mishandling ingredients and dirty kitchens. Issues that take longer to correct include pest infestations, power outages and plumbing problems.

It’s rare, but a business may temporarily shut down over violations.

Places that fail are usually reinspected within 10 days.

Out-of-compliance inspections

Midian Shriners, 130 N. Topeka in Wichita — Four violations on June 5 during a routine inspection. Violations include a meat slicer with dried food debris on the blade and guide, a hose sprayer hanging below the flood rim of the sink, beef burger thawing in a sink directly plumbed to the sewer, beef thawing under running water in a sink that is supposed to be dedicated to hand-washing. Next inspection: June 15.

Oliver St. C Store (same address as Phillips 66), 2001 S. Oliver in Wichita — One violation on June 6 during a follow-up inspection. No test strips on site for quaternary ammonium sanitizer. Next inspection: June 16.
