Flyswatter on food wrap, cockroaches, meat on floor & more at Wichita restaurants

Nine restaurants and other businesses that serve or sell food to the public in Wichita and surrounding towns were out of compliance during recent food safety and lodging inspections by the Kansas Department of Agriculture.

The businesses were cited for a number of violations, including living and dead cockroaches, a dirty flyswatter in a box of food wrap, dead flies hanging over food, mouse feces, employees who didn’t wash their hands, old eggs and ham steaks, meat stored on the floor, foods and medication that weren’t properly labeled, problems with sanitizer, no hot water in bathrooms and more, according to Nov. 17-23 inspection reports.

Information about the businesses and a summary of their violations appear below. The businesses listed are all in Sedgwick County. The list was compiled Nov. 26 using information available in the KDA’s statewide inspections database on that date.

More than 50 businesses passed their inspections during the same period. A list of those also appears below. Some may have been non-compliant in previous weeks.

Out-of-compliance inspections

Chicken Chicken, 2419 E. 13th St. in Wichita — Eleven violations on Nov. 21 during a complaint inspection. Violations include no verifiable employee illness policy, employee washed hands without soap after handling raw chicken, no written plan to clean up vomiting or diarrhea incidents, approximately 40-50 mouse droppings along baseboard in employee restroom and in kitchen areas, fly strip with approximately two dozen dead flies was hanging over breading station, employee handled raw chicken then cooked fish without changing gloves or washing hands, sanitizing station was not set up and there were no test strips for measuring the concentration of sanitizer, no paper towels at hand-washing sink in kitchen, three fly strips with a large amount of dead flies, chicken wings in fryer basket weren’t kept hot enough. Next inspection: Dec. 1.

Country Cafe, 2804 S. Seneca in Wichita — Nine violations on Nov. 20 during a routine inspection. Violations include food in steam table like turkey and goulash wasn’t kept hot enough, pan of baked potatoes was sitting out at room temperature instead of being stored in the refrigerator, rehydrated hashbrowns were sitting out at room temperature, raw eggs were sitting out at room temperature, tub of diced tomatoes wasn’t labeled with their preparation date, old hardboiled eggs and ham steaks, deli slicer was soiled with visible food debris, not enough sanitizer in dishwashing machine, raw cube steak stored above sour cream. Next inspection: Nov. 30.

The Easy Egg Breakfast & Lunch, 5700 W. Kellogg Drive in Wichita — Two violations on Nov. 20 during a follow-up inspection. Violations include dead cockroaches in mop sink room near water heater, dead cockroaches by box soda, live roach on a sticky trap in storage room near office. Next inspection: Jan. 20.

Great Wall Chinese Restaurant, 360 N. Main, Suite 700 in Haysville — Twelve violations on Nov. 21 during a joint inspection. Violations include raw eggs stored by celery and sauces, raw pork ribs stored on top of carrots and onions in the walk-in cooler, raw pork egg rolls stored over cream cheese mix, three plastic pans were soiled with food debris, dirty flyswatter was stored in a food wrap container, garlic and oil mix was stored at room temperature, wiping cloths used for cleaning surfaces that touch food were stored on preparation tables, a sauce bottle that had been cut was being used as rice scoop, two large metal bowls were blocking a hand-washing sink, unlabeled pump sprayer, cooked noodles and cream cheese crab mix weren’t labeled with their package opening or preparation dates, employee didn’t sanitize bowls, fried chicken and pork fried rice wasn’t kept hot enough, build up of grease and food debris on floor and baseboards. Next inspection: Dec. 1.

Guelaguetza Market, 2835 S. Hydraulic in Wichita — Eleven violations on Nov. 22 during a complaint inspection. Violations include dead cockroaches on floors in several areas including bathroom and by freezer, no labeling or ingredient information available for various baked goods, one large live cockroach in employee restroom near water heater, old table saw and dozens of old retail storage racks sitting near freezer, several boxes of frozen raw pork thawing on floor, several boxes of medicine weren’t labeled in English, food including several boxes of raw pork were stored on the ground, business was selling Capri Suns that weren’t labeled for individual sale, several packages of pecans for sale had no labeling information, box of raw pork was too warm, business has no pest control, pest control measures and deep cleaning needed. Next inspection: Dec. 2.

Kababs, 3101 N. Rock Road, Suite 110 in Wichita — Seven violations on Nov. 20 during a routine inspection. Violations include raw meats and seafood stored above cooked chicken curry, no working food thermometer, employee didn’t sanitize a food preparation table after their cell phone was sitting on it, grilled chicken and curry weren’t kept hot enough, no hot water under pressure at hand-washing sink, potato salad and lettuce weren’t kept cold enough, employee touched phone then a tortilla without washing hands or changing gloves. Next inspection: Nov. 30.

Norton’s Brewing Company, 125 N. St. Francis in Wichita — Four violations on Nov. 21 during a routine inspection. Violations include clean pans soiled with sticker residue, dirty meat slicer and can opener, box of beef cube steaks thawing at room temperature, cheese cake and cream weren’t labeled with their package opening dates, no hot water at men’s bathroom sink. Next inspection: Dec. 1.

River City Brewing Company, 2277 S. Eisenhower Airport Parkway in Wichita — Six violations on Nov. 22 during a complaint inspection. Violations include employee pushing down trash then putting on gloves to handle tomatoes without washing hands, bottle of green burn gel stored next to food, buttermilk and beer batter weren’t kept cold enough, employee touched a cup and his glasses then handled pizza dough and a hamburger bun without changing gloves or washing hands, jammed paper towel dispenser, build-up of flour and grease on preparation table. Next inspection: Dec. 2.

Subway, 19951 W. Kellogg Drive in Goddard — Two violations on Nov. 22 during a routine inspection. Violations include leaking atmospheric vacuum breaker at mop sink, meatballs weren’t kept hot enough. Next inspection: Dec. 2.

How do businesses fail inspections?

Businesses fall out of compliance when they have too many violations, issues that can cause a foodborne illness, when a problem can’t be fixed right away and more. Examples include plumbing problems, serving food that’s more than a week old, pest infestations and employees mishandling food.

Violations are common. Most businesses immediately correct issues that could cause a public health risk, such as a food-borne illness, in front of an inspector.

Typically, businesses are reinspected within 10 days to ensure they are following the rules.

It’s rare for a business to shut down. But it can happen over major problems like sewage backups, pest infestations, and water or power outages. Closures are usually temporary and voluntary.

What to do if you have a complaint

If you see problems at a food or lodging establishment, you can file a complaint.

To notify the state about unsavory or questionable conditions anywhere that serves or sells food to the public, email kda.fsl@ks.gov or call 785-564-6767. You can also file a complaint at www.foodsafetykansas.org.

To report an illness you think was caused by a restaurant, food or event where food was served, contact the Kansas Department of Health and Environment at 877-427-7317 or www.foodsafetykansas.org.

Complaints about conditions at hotels and motels can be submitted at www.agriculture.ks.gov/public-resources/comments-complaints/lodging-complaint.
