Former Yen Ching Chinese Restaurant & Club diners probably won’t believe the transformation that its former building near the southeast corner of Central and Rock Road has undergone.
Qdoba Mexican Grill opens in the space at 10:30 a.m. Friday.
Franchisee Eric Estes says he wasn’t sure he was going to be able to put his restaurant in the former Yen Ching space. He thought he might have to demolish the building and start over.
He was, though, able to convert the formerly two-story building for his needs.
