Wichita’s newest food truck opens on Friday, and it specializes in tacos. Gaga’s Grub is owned by Perry, Okla., caterer and food truck operator Dustin Presley, who’s leasing his second truck to buddy Vic Ramos, who will run it as Gaga’s Grub Wichita.
The truck serves chicken and pork tacos with choice of toppings and sauces. The truck has four sweet and four savory sauces. It will have its first Wichita service from 11 a.m. to 2 p.m. and 5 to 8 p.m. on Friday in front of Maggie’s liquor store at Douglas and Meridian. Ramos will repeat the same hours on Sunday.
Ramos and Presley met years ago when both worked for Scott Redler’s Timberline restaurant. They stayed in touch, even when Presley moved to Perry to be closer to his family. Two years ago, Presley opened a catering company and a food truck, which he sold tacos from. About a month ago, he git a bigger truck and started a new menu, alternating between a tacos and pasta.
He contacted Ramos to see if he wanted to take over the original truck and run it in Wichita. Ramos will use Presley’s taco menu and is free to add his own twist, Presley said. The truck also has nachos.
For now, Ramos is trying to figure out Wichita’s food truck rules but will likely set up at meet ups and rallies this spring and summer, Presley said. In the meantime, Presley and his wife are trying to sell their house in Perry and want to return to Wichita, where they’ll operate the other truck, too.
Ramos isn’t sure where he’ll park after Sunday but said he will update his location on the truck’s Facebook page, facebook.com/gagasgrub.wichita.
