Easy duck, goose recipes to be demonstrated at Cabela’s

Michael Pearce, the Wichita Eagle’s Outdoors writer and photographer, will demonstrate how to make a duck recipe at next weekend’s Waterfowl Classic at Cabela’s, 2427 N. Greenwich Road.

Seminars in use of motorized decoys, hunting ducks and geese on water and in fields, and best equipment start hourly from 11 a.m. through 2 p.m. Saturday and Sunday.

At noon Saturday, Pearce will demonstrate how to make “Peace Creek Duck,” a recipe that takes only a few minutes to prepare and a few more to cook. Pearce will also demonstrate a way to make the breast meat of big Canada geese reminiscent of quality beef.

Pearce will sign copies of his book, “Michael Pearce’s Taste of the Kansas Outdoors Cookbook.” It features more than 50 recipes, scores of wild game cooking tips and more than 150 photos of the Kansas outdoors.
