Restaurants, grocers, hotel in Wichita KS fail over bugs, dirty items, hygiene & more

Four restaurants, two grocery stores and a hotel in Wichita were out of compliance during Kansas Department of Agriculture food safety and lodging inspections conducted July 23-29.

Information about the seven Sedgwick County businesses and their violations appears below in an alphabetical list with a summary of the problems inspectors found. More details are posted in The Eagle’s searchable database of non-compliant restaurant and hotel inspections at www.kansas.com/databases. This list was compiled Aug. 3.

More than 40 establishments passed inspections with few or no violations last week. Those appear alphabetically below. Some may have been on a prior non-compliant list.

How establishments fail

Most violations are minor and are corrected during an inspection.

Businesses fall out of compliance when they have too many violations, issues that can cause foodborne illnesses or when a problem can’t be fixed right away, like bug and rodent infestations.

It’s rare for an establishment to shut down over a failed inspection, but it can happen. Circumstances that can lead to a closure include sewage backups, ongoing or untreated pest problems, and if a business operates without water, power or refrigeration. Usually closures are temporary.

When an establishment fails, it’s typically inspected again within 10 days.

Out-of-compliance inspections

Chili’s Grill and Bar, 2333 N. Greenwich in Wichita — Six violations on July 25 during a verification inspection. Cited because sanitizer concentration in wiping cloth buckets wasn’t correct, issue with how a backflow prevention device at mop sink was being used, pans in clean storage had food residue on them, no flowing water at hand-washing sink, dead batteries in paper towel dispenser, several refrigerated foods including pepperoni and raw beef weren’t kept cold enough. Next inspection: Aug. 4.

Dillons, 5500 E. Harry in Wichita — Eight violations on July 26 during a verification inspection. Cited because crab rangoon filling in Chinese kitchen wasn’t labeled with correct preparation date, dirty meat slicer, flies in meat department were landing on surfaces that foods touch, butter left out at room temperature, hand-washing sink in bakery was blocked by rolling carts, chicken pieces in Chinese kitchen weren’t kept warm enough, chemical spray bottles stored on top of food boxes, water wasn’t hot at hand-washing sinks in employee bathrooms. Next inspection: Aug. 5.

Freddy’s Frozen Custard and Steakburgers, 420 S. Ridge, Ste. 100 in Wichita — One violation on July 27 during a follow-up inspection. Cited over refrigerated foods that were too warm including cheese and vegetables. Next inspection: Sept. 27.

Hog Wild Pit Bar-B-Q, 3550 N. Woodlawn, Ste. 100 in Wichita — Five violations on July 24 during a verification inspection. Cited over an issue with how a backflow prevention device at mop sink was being used, employee touched customer money then touched food without washing hands, refrigerated foods including cheese and potato salad weren’t kept cold enough, business couldn’t find food thermometer that reads below 50 degrees, bags of pulled chicken and sliced turkey breast weren’t labeled with preparation dates. Next inspection: Aug. 3.

Red Roof Inn, 6815 W. Kellogg in Wichita — Nine violations on July 24 during a complaint inspection. Cited because there was no carbon monoxide detector in the laundry room with gas dryers, no records showing carbon monoxide detectors are checked every six months, sticky liquid spilled next to bed in one room, no GFCI (ground-fault circuit interrupter) outlets by sinks in three rooms, no inspection report showing hard-wired smoke alarms and the fire suppression system had been checked by a fire alarm company, missing outlet cover in one room, no emergency management plan, ice bucket in one room didn’t have a liner. Next inspection: Aug. 4.

Sonic Drive-In, 504 S. Broadway in Wichita — Four violations on July 27 during a verification inspection. Cited because cheese slices weren’t cold enough in refrigeration, food slicer stored as clean had food residue on blade, issue with how a backflow prevention device at mop sink was being used, 25-35 flies around restaurant landing on food surfaces including clean utensils and food storage items. Next inspection: Aug. 6.

Tortilleria El Guero, 3750 W. Douglas in Wichita — Fifteen violations on July 27 during a verification inspection. Cited for not labeling frozen meat products in English, no backflow prevention device on three-compartment sink in tortilla bakery, no paper towels at meat department hand-washing sink, flour and sugar in tortilla bakery area wasn’t stored in a food-grade container, no food thermometer, hand-washing sink in tortilla bakery area was full of pads and a water bottle, puffed wheat products weren’t labeled with ingredients or allergen information, no hand-washing sink in room where cooking and food preparation is done, laundry detergent stored above packaged chips and gum, employee didn’t wash hands and change gloves after handling raw meat, raw eggs stored above salsa in cooler, raw chicken stored above raw beef and raw sausage in meat department cooler, puffed wheat products weren’t labeled with nutrition information. Next inspection: Aug. 6.
