Restaurant inspections: Old deli meats, dirty kitchen, sanitizer out in Wichita KS
Three restaurants and a retirement community in Sedgwick County were out of compliance during Kansas Department of Agriculture food safety and lodging inspections conducted June 18-24.
Information about the businesses and their violations appears below in an alphabetical list with a summary of the problems inspectors noted on their reports. More details are posted in The Eagle’s searchable database of non-compliant restaurant and hotel inspections at www.kansas.com/databases. The list was compiled June 30.
More than 40 establishments passed their inspections with few or no violations. Those appear alphabetically below. Some may have been on a prior non-compliant list.

How establishments fail
Most violations are minor and are corrected during an inspection.
Businesses fall out of compliance when they have too many violations, issues that can cause foodborne illnesses or when a problem can’t be fixed right away, like bug and rodent infestations.
It’s rare for an establishment to shut down over a failed inspection, but it can happen if there are sewage backups, ongoing or untreated pest problems, or a business operates without water, power or refrigeration. Usually closures are temporary.
When an establishment fails, it’s typically inspected again within 10 days.

Out-of-compliance inspections
Abuelo’s Mexican Food Embassy, 1413 N. Waterfront Pkwy. in Wichita — Nine violations on June 21 during a joint inspection. Cited for stacking empty buckets in sink which made it usable for hand-washing, no sanitizer in dishwasher, several items weren’t cold enough including vegetables and cheeses, missing temperature information on log, dirty pans stored as clean, bottle of sanitizer stored with nozzle facing uncovered pans of salsa, soap and sponge in bucket stored above tortilla chips and shells, employee didn’t wash hands between handling dirty and clean dishes, eggs weren’t cold enough in refrigeration. Next inspection: July 1.
Burger Central, 3302 W. Central in Wichita — Seven violations on June 21 during a complaint inspection. Cited over “accumulation of grease and food debris” behind and under kitchen equipment, raw eggs and raw chicken stored above cooked hot dogs, items in refrigeration including cheese and raw ground beef weren’t cold enough, no advisory warning customers of risk of consuming raw or undercooked eggs, old whipped cream, employee didn’t wash hands after handling raw egg, raw chicken stored on top of flat of raw eggs. Next inspection: July 1.
Deano’s Grill & Tapworks, 9747 E. 21st St., Ste. 101 in Wichita — Seven violations on June 22 during a routine inspection. Cited because the sanitizer in the dishwasher was empty, wrong preparation dates on several meat items including chicken and pork, cook didn’t wash hands after cracking a raw egg, several refrigerated items were out of temperature including pizza and salad ingredients, old sauce, no test strips for measuring concentration of sanitizer, dirty can opener and containers. Next inspection: July 2.
Reflection Ridge Retirement Community, 2300 N. Tyler Road in Wichita — Eight violations on June 20 during a routine inspection. Cited over old tomatoes and deli meats, chipped and cracked spatulas, raw eggs stored above cartons of pasteurized eggs, several breakfast buffet items including hard-boiled eggs and cottage cheese weren’t kept cold enough, butter sitting out at room temperature, dirty can opener, empty soap dispenser at kitchen sink, employee didn’t wash hands between handling dirty and clean dishes, bucket of sanitizer stored above food containers and clean dishes. Next inspection: June 30.
