Restaurant inspections: Old eggs, cook didn’t wear gloves, no hot water in Wichita KS

Three restaurants in Sedgwick County were out of compliance during Kansas Department of Agriculture food safety and lodging inspections conducted June 11-17.

Information about the businesses and their violations appears below in an alphabetical list with a summary of the problems. More details are posted in The Eagle’s searchable database of non-compliant restaurant and hotel inspections at www.kansas.com/databases. The list was compiled June 22.

More than 50 establishments passed their inspections with few or no violations. Those appear alphabetically below. Some may have been on a prior non-compliant list.

How establishments fail

Most violations are minor and are corrected during an inspection.

Businesses fall out of compliance when they have too many violations, issues that can cause foodborne illnesses or when a problem can’t be fixed right away, like bug and rodent infestations.

It’s rare for an establishment to shut down over a failed inspection, but it can happen. Examples include sewage backups, ongoing or untreated pest problems, or operating without water, power or refrigeration. Usually closures are temporary.

When a business fails, it’s typically inspected again within 10 days.

Out-of-compliance inspections

Oasis Lounge, 4121 W. Maple in Wichita — Five violations on June 13 during a routine inspection. Cited for not keeping nacho cheese hot enough, cheese and vegetables weren’t cold enough in refrigerated preparation table, container of old cooked eggs in cooler, employee blew into plastic gloves before putting them on, old heavy whipping cream. Next inspection: June 23.

Tacos El Chaparro (mobile vendor/food truck), 508 W. 29th St. North in Wichita — Five violations on June 17 during its first operational inspection after licensing. Cited for not having test strips to measure concentration of sanitizer, no sanitizer for dishwashing, cook was making tacos with bare hands and there were no gloves available, temperature in refrigerator wasn’t cold enough, chicken in hot holding wasn’t warm enough. Next inspection: June 27.

Usuluteco Restaurant, 2265 S. Seneca in Wichita — Five violations on June 14 during an expired license inspection. Cited for not labeling several foods including chicken and vegetables with preparation dates, “unlabeled sprayer bottle with a green liquid,” no probe-style food thermometer on site, no hot water at kitchen hand-washing sink, several pupusa mixtures containing meats and cheeses were sitting out at room temperature, containers of raw meat and feta cheese were sitting out at room temperature. Next inspection: June 24.
