Restaurant inspections: Speck in ice, school milk wasn’t cold, bread issues in Wichita KS

Three Wichita-area restaurants and other businesses were deemed out of compliance during Kansas Department of Agriculture food safety and lodging inspections conducted Oct. 9-15.

Information about the Sedgwick County businesses and their violations, compiled Oct. 21, appears below with a summary of the problems inspectors noted on their reports. More than 70 businesses surveyed Oct. 9-15 passed their inspections with few or no violations. You can see those at www.foodsafety.kda.ks.gov/FoodSafety/Web/Inspection/PublicInspectionSearch.aspx.

Failing an inspection doesn’t necessarily mean a business has to close; that’s rare. Most violations are minor and are corrected immediately during an inspection.

Businesses fall out of compliance with state rules when they have too many violations or certain types of problems that can increase the risk of a customer contracting a food-borne illness and also when a problem can’t be fixed right away, such as pest and plumbing issues.

When a business fails, it’s usually inspected again within 10 days.

Recent out-of-compliance inspections

The Bunnery, 1025 W. 29th St. North in Wichita — One violation during an Oct. 12 follow-up inspection. Cited over its use of shredded cheddar cheese on a baked bread product. The cheese is melted over the bread after baking then treated as shelf stable even though the cheese package says to refrigerate it. The owner told the inspector samples of the bread haven’t been submitted to the lab for testing for safety, contrary to prior reports. Next inspection: Dec. 12.

McDonald’s, 917 N. Baltimore in Derby — One violation during an Oct. 13 modified complaint inspection. Cited after an inspector found a piece of ice with a black speck inside in an ice bin. The same problem was noted during an earlier inspection, on June 23. Next inspection: Oct. 23.

St. Cecilia’s Catholic School, 1912 W. Grand in Haysville — Two violations during an Oct. 13 routine inspection. Cited over milk that was out of temperature in the milk cooler, no ambient air thermometer in milk cooler. The school threw away around $30 worth of chocolate, vanilla and strawberry milk in response. Next inspection: Oct. 23.
