Wichita inspections: Unsanitary conditions, rodents, roach, unapproved sous-vide prep
Seven businesses in the Wichita area, including multiple restaurants, a snack bar, a bakery and a coffee store, were out of compliance after recent Kansas Department of Agriculture food and lodging safety inspections, a check of reports from June 12-18 shows.
Information about the Sedgwick County businesses and their violations, compiled June 24, appears below with a summary of the problems inspectors noted on their reports. More than 50 businesses surveyed during the same time period passed their inspections with few or no violations. You can see those at www.foodsafety.kda.ks.gov/FoodSafety/Web/Inspection/PublicInspectionSearch.aspx.
Failing an inspection doesn’t necessarily mean a business has to close; that’s rare. Most violations are minor and are immediately corrected on site in front of an inspector.
Businesses fall out of compliance with state rules when they have too many violations or certain types of problems that can increase the risk of a customer contracting a food-borne illness, or when a problem can’t be fixed right away.
When a business fails, it’s usually inspected again within 10 days.

Recent out-of-compliance inspections:
Buffalo Wild Wings, 1918 N. Rock Road Ste. 100 in Derby — One violation on June 17 for cockroaches. The inspector saw one on a kitchen wall by a dishwasher. Next inspection: Aug. 17.
The Bunnery, 1025 W. 29th St. North in Wichita — Three violations on June 14 for propping open door by dock which can lead to pest infestation, business has unsanitary conditions and is in disrepair in areas including around internal plumbing fixtures and sinks where there is degrading drywall and wood and evidence of rodents nesting. Next inspection: Aug. 14.
Lee’s Sandwich, 6546 E. Central in Wichita — Five violations on June 16 for employee washing hands in wrong sink, employee handled ready-to-serve noodles and shaved pork with bare hands, pork and egg baozi bun dumplings were being stored at room temperature, not sanitizing dishes, business was storing ant and roach killer that isn’t approved for restaurant use on site. Next inspection: June 27.
Palmer’s Snack Bar, 101 W. 29th St. North in Wichita — Six violations on June 17 for not having a person who was in charge of the establishment present for the inspection, employee didn’t wash hands after handling raw meat several times during inspection, raw hamburger patties and raw eggs stored above hamburger buns in cooler, no soap at bathroom sink, business was using scented bleach to sanitize dishes instead of unscented bleach. None of the violations were fully corrected on site during the inspection, in part because when the owner arrived, they told the inspector that all food-related questions should be addressed with food employees. Next inspection: July 7.
Roaster Joe’s, 4428 W. 29th Circle S. in Wichita — One violation on June 14 over their water jug sanitizing methods. The business uses ozone sanitizing but the sanitizing machine wasn’t working properly. Next inspection: Aug. 14.
Vora, 3252 E. Douglas, Ste. 106 in Wichita — One violation on June 14. The business uses a sous-vide (low temperature, long cook) method to prepare various items on their menu such as chicken and lamb but doesn’t have an approved health plan in place with the state to do so. The inspector gave the restaurant a template and contact information to get that done. Next inspection: July 14.
Whiskey Dicks, 801 S. Seneca in Wichita — Four violations on June 14 for dishwasher that wasn’t sanitizing dishes, no soap or hand-drying supplies at kitchen sink, unlabeled chemical bottles. Next inspection: June 24.
