Wichita inspections: No hot water, old ranch, raw beef thawing at room temperature

Three restaurants and a local coffee roaster failed their Kansas Department of Agriculture food and lodging safety inspections from April 10-16, a check of reports for Sedgwick County shows.

Information about the businesses and violations, compiled April 22, appears below with a summary of the problems inspectors noted on their reports. More details, including specific violation descriptions and survey dates, are posted in The Eagle’s searchable database of non-compliant restaurant and hotel inspections at www.kansas.com/databases.

More than 40 businesses surveyed during the same time period passed their inspections with few or no violations. You can see those at www.foodsafety.kda.ks.gov/FoodSafety/Web/Inspection/PublicInspectionSearch.aspx.

Failing an inspection doesn’t necessarily mean a business has to close; that’s rare. Most violations are minor and are immediately corrected on site.

Businesses fall out of compliance with state rules when they have too many violations or certain types of problems that can increase the risk of a customer contracting a food-borne illness or when a problem can’t be fixed right away, such as plumbing issues and pest infestations.

When a business fails, it’s usually inspected again within 10 days.

Recent out-of-compliance inspections:

Slider Shak, 4628 S. Seneca in Wichita — Six violations on April 13 including storing raw beef above cooked chicken in cooler, thawing raw beef at room temperature, old ranch sauce, sanitizer was the wrong strength, plumbing issue, storing container of flour and towels in hand-washing sink. Next inspection: June 13.

Spangles, 1023 E. 61st St. N. in Park City — Four violations on April 14 including employee not cleaning hands properly, employee not washing hands after handling towel soaked with sanitizer, employee handling ready-to-eat food with bare hands, food including meats and gravy stored at unsafe temperatures. Next inspection: April 24.

Wichita Coffee Roasteries Inc., 4428 W. 29th St. S. Cir. in Wichita — One violation on April 11 related to sanitation. Next inspection: June 10.

Wichita Local Eats, 2721 E. Central Ave. in Wichita — Five violations on April 16 including storing salsa at unsafe temperature, containers of salsa verde weren’t labeled with preparation dates, no hot water at hand-washing sink, business didn’t have current food license posted. Next inspection: April 26.
