To be fair, Luis Alfaro warned us.
In late 2014, he told Have You Heard? he was going to open his third Los Cocos Mexican Restaurant at the Andover MarketPlace at the southeast corner of Kellogg and Andover, but he wasn’t sure when.
It’s taken much longer than Alfaro expected, and even now that the building is almost ready, he says he’s still not 100 percent sure when the restaurant will open.
“Most likely it’ll be late May,” Alfaro says.

He says the permitting process took about a year, then construction began in September.
“We’ve been in construction ever since.”
He has a little more to go and then needs to furnish the inside and add kitchen equipment.
“We’ve got our licensing and everything,” Alfaro says. “We thought we were going to open in April.”
Even though it’s been a long process, he says he’s already thinking about additional Los Cocos restaurants.
There’s one at 13th and Tyler and another in Derby.
“I have a couple of places in mind,” Alfaro says of future sites, “but it would be too soon for me to say when I haven’t even opened this one.”
