The new west-side Jimmie’s Diner is about ready to open in the former Ciao Italian Kitchen space at 21st and Tyler where Tommy’s was before that.
“The intent is to open first of next week,” says Jack Davidson, who owns the business with his wife, Linda, and their son, Joe. “We’re pretty confident that’ll happen.”
The business will be hiring from 2 to 5 p.m. Thursday and Friday at the restaurant to complete the staff.
The Davidsons purchased the Jimmie’s at 3111 N. Rock Road in 2007 and then in 2012 opened a second one of the 1950s-style diners in the former Toc’s Coffeehouse space at at Harry and George Washington Boulevard.

“When you coming west?” is the most frequent question that Davidson says he and his family get.
He says this opening will be a little different than past ones.
“We’re going to just open for breakfast and lunch hours for the first couple of weeks,” he says. “We’re going to try to walk before we run on this one.”
Not long after, Davidson says he’ll add dinners as well.
“We’re looking forward to meeting a whole bunch of new friends in west Wichita starting in a few days.”
