Luis Alfaro knows he’s going to open his third Los Cocos Mexican Restaurant at the Andover MarketPlace at the southeast corner of Kellogg and Andover, but he’s not yet sure when.
“We’re hoping to break ground this month, but we’re probably going to wait,” he says.
Alfaro says he’s concerned it’s going to be a bad winter, which could cause construction issues.
“We’re just probably going to wait until early March to break ground.”

If that’s the case, the 5,000-square-foot restaurant likely would open in September.
Alfaro expects it will seat about 170 inside and another 25 or so people on an outdoor patio.
The first Los Cocos opened near 13th and Tyler in 2007. Alfaro opened one at 1257 N. Rock Road in Derby in 2011, which is the same year he closed a 3-year-old Los Cocos in Manhattan. He says there were building issues with that restaurant.
While Manhattan is a possibility again one day, Alfaro says it makes more sense to go to Andover now.
“If I can stay here in the metro area, it’s more convenient. It’s easier to manage.”
The new Los Cocos will be just east of the Arby’s in the Andover MarketPlace.
Alfaro says he’s also remodeling his west-side Los Cocos.
“It’s almost done.”
He says the work should wrap up in three or four weeks. The restaurant is still open during renovation.
There are two or three other spots around the Wichita metro area that Alfaro is considering for future Los Cocos restaurants, but he says he doesn’t want to say where they are until he secures the ground. He says he’ll keep us posted.
