Los Cocos Mexican Restaurant plans spring opening in Andover

Luis Alfaro is one step closer to getting a new Los Cocos Mexican Restaurant at the Andover MarketPlace at the southeast corner of Kellogg and Andover.

When Alfaro first told Have You Heard? of his plans in November, he said there was a good chance he might not start construction until March or open the 5,000-square-foot restaurant until September.

Now, September is when he plans to break ground.

“We were having a little bit of trouble getting the final drawings and the permit ready, but we finally got that this week,” Alfaro says.

He guesses that the restaurant likely will open in the spring.

Alfaro also is remodeling his west Wichita Los Cocos near 13th and Tyler.

“We’re just trying to finish remodeling the west store, which has been a long time,” he says.

He says he’s doing the work while keeping the business open “to pay the bills.”

“That’s the hard part.”
