Use frozen artichokes for better flavor in this easy-to-make Warm Spinach-Artichoke dip
February: It’s the month of love, the Kansas City Chiefs and Super Bowl Sunday.
Football has never been my thing, although my dad was a star football player in college and even tried out for the Dallas Cowboys. My husband lives for football, too. For me, it’s about the food — big surprise. Whether it’s a tailgate at Snyder Stadium with Randy or a game at home, I’m all about what we’re eating.
This week’s recipe is for Warm Spinach-Artichoke Dip. It’s been on my mind for a few weeks now, and because people will be heading to Super Bowl parties, I thought I’d feature it this week. This recipe is from Food and Wine magazine, and it’s simple, straightforward and delicious — all key ingredients when making a dip. I love that it uses frozen artichokes instead of canned for a bit “fresher” flavor. If you’re attending a large party, this dip is easy to double or even triple. It says it serves 10, but if you dip like I dip, don’t count on that number.

Warm Spinach-Artichoke Dip
6 ounces cream cheese, softened
3 ounces Gouda cheese, grated (about ¾ cup)
2 ounces low-moisture part-skim mozzarella cheese, shredded (about ½ cup)
1 cup chopped thawed frozen spinach, drained well
¾ cup chopped thawed frozen artichoke hearts
¼ cup scallions (from 3 scallions)
¼ cup mayonnaise
1 teaspoon finely chopped garlic (from 1 garlic clove)
½ teaspoon kosher salt
¼ teaspoon cayenne pepper
1 ounce Parmesan cheese, grated (about ¼ cup)
Crostini or tortilla chips
Preheat the oven to 400 degrees. Stir together cream cheese, Gouda, mozzarella, spinach, artichoke hearts, scallions, mayonnaise, garlic, salt and cayenne pepper in a medium bowl until smooth. Spoon into a 1-quart baking dish; sprinkle top evenly with Parmesan. Bake in preheated oven until browned and bubbly, about 25 minutes. Serve with crostini or tortilla chips.
