Let the January openings continue.

Today, there’s news that the new Smoothie King in the Union Station project in downtown Wichita will open on Monday. The shop, which is in the Rock Island Depot building at 711 E. Douglas, will be the first business open in the new development, which within the month will also add Mumbai Rail Bistro and a sit-down Scooter’s Coffehouse.

I went to peek in this morning, and the Smoothie King is ready to go. It’s in a tiny space, with not much room for seating, but it will have a drive-through. The shop also has shelves lined with protein powders that can be purchased, and it looks like the designers kept the original hexagon tile flooring in the old Rock Island Depot building, which is a nice touch.

The walk-in entrance is on the west-facing side of the building. The new Smoothie King will be open from 7 a.m. to 9 p.m. Mondays through Fridays, from 9 a.m. to 9 p.m. Saturdays and from 10 a.m. to 6 p.m. Sundays.

In other restaurant opening news, the new Jimmie’s Diner in the former west-side Ciao Italian Kitchen space, 2121 N. Tyler, opened this morning. For the first few weeks, it will be open only breakfast and lunch hours and will add dinner soon. Check out the picture of the interior that owner Linda Davidson sent this morning.
