Wichita’s new soul food restaurant serves fried ribs, wings and more

Wichita has a new carry-out soul food restaurant that specializes in an interesting entree: fried ribs.

Mike and Debbie McKinney opened Maddies Soulfood Carry-Out two weeks ago in a tiny building at 2021 S. Oliver that used to hold a barber shop. Debbie, a 30-year veteran of Beechcraft, was known there for her soul food cooking and contributed recipes over the years to in-house cookbooks. She decided to start cooking them at her own restaurant.

Fried ribs, a Southern delicacy, are among the many soul food items on the menu. It also offers quarter-pounder burgers, chicken wings, catfish, okra, spaghetti, cabbage, fries, greens and black-eyed peas. There’s seating for just a couple of people inside.

The restaurant has an easy-to-remember phone number to call for carryout orders: 316-425-SOUL, which translates to 316-425-7685. Hours are 11 a.m. to 8 p.m. daily except Fridays and Saturdays, when it stays open until 4 a.m.
