Near-Wichita steakhouse described as Texas Roadhouse meets Redrock Canyon Grill
The same restaurateurs who already have three restaurants in Wichita and one in Benton are about to open their newest concept in Derby.
John Arnold and his business partner Lauren Irwin — who also own two Deano’s restaurants and Oak & Pie in Wichita as well as Stearman Field Bar & Grill in Benton — say that they’ll soon launch an invite-only soft opening for their new Morgan’s Steakhouse at 3201 N. Rock Road in Derby.
The restaurant, which the owners first announced in February 2023, will open to the public on Dec. 1.
Irwin describes Morgan’s as what would happen if “Redrock and Texas Roadhouse had a baby but made it more modern and open and airy and light.”
Arnold describes it as a mid-level steak house, somewhere people can go for more than just special occasions
Its menu features steaks — including sirloin, strip, filet, rib eye and The Morgan’s Special, which is a nine-ounce sliced beef tenderloin topped with Worcestershire butter. It also includes entrees like ribs, pork tenderloin, salmon, grilled chicken, enchiladas and chicken fried steak as well as burgers and a chicken sandwich.
The menu also features dishes that might sound familiar to some of those served at Redrock Canyon Grill, where Arnold worked as managing partner early in his career. One of them is the enchiladas, which Arnold said he invented while at Redrock. Originally, they were called John “B” Good enchiladas in honor of him.
“When they took the name off of it, I started using it at my other restaurants,” Arnold said.
Among the Texas Roadhouse-esque touches at Morgans: Every customer will be greeted with a basket of hot yeast rolls served with a side of vanilla honey butter.
The layout of Morgan’s is nearly identical to that of Redrock Canyon Grill: The center of the restaurant has a long, horseshoe bar lined with booths. On either side of the middle section on raised platforms, customers will find a collection of half-circle booths. The expo kitchen sits just beyond the bar.
The interior of the restaurant has a Southwestern cowboy feel. It’s filled with live cactus plants, has walls finished with limestone, and is decorated with statues of cowboys on horseback. Country music plays in the background, and a neon cowgirl, which the owners had made to resemble one they loved on Fremont Street in Las Vegas, hangs above the kitchen. Irwin has dubbed her “Vegas Vicky.”
Morgan’s also will serve a menu of brunch items starting at 11 a.m. on Saturdays and Sundays. Among its brunch offerings will be a chicken pot pie, an omelet, spinach and bacon quiche, avocado toast, meatloaf (which will be served only on weekends) and cornmeal pancakes.
The restaurant will have a full bar and will barrel age its own whiskey. It also will serve a menu of craft cocktails.
Arnold and Irwin said that they were dedicated to keeping Morgan’s prices as low as they could. Steaks range from $16.99 for an 8-oz. sirloin to $45.99 for a bone-in, 20 oz. rib eye. Entrees run between $12.99 and $19.99. And Morgan’s also will offer a $12.99 early-bird special served between 3 and 5 p.m. Mondays through Thursdays. The specials will include smaller portions of some of Morgan’s entrees plus one roll and one side item.
“We are trying desperately not to shock the people because we want them to be able to come a lot,” Irwin said. “I will be devastated if people think this is someplace they can come only for an anniversary or a birthday.”
Arnold and Irwin also said they’re hoping to expand the Morgan’s concept to other Derby-size communities in the area. They’re already looking at another property and are waiting to find out if the deal will go through.
Morgan’s Steakhouse, which sits in the shadow of the Derby water tower and within view of the tallest dinos at Field Station Dinosaurs next door. Its hours will be 3 to 10 p.m. Mondays through Thursdays; 3 to 11 p.m. Fridays; 11 a.m. to 11 p.m. Saturdays; and 11 a.m. to 9 p.m. Sundays.
