This popular sub chain is finally open in Derby. West Wichita won’t be far behind.
Fans of Jersey Mike’s Subs have had only one place to get their favorite sandwiches in the Wichita area since franchisee Chris Stong opened the chain’s first local restaurant in March of 2020 at 2564 N. Greenwich.
This week, he added a second area restaurant, and the third shouldn’t be far behind.
After many delays, Stong opened his Jersey Mike’s restaurant at 1918 N. Rock Road in Derby on Wednesday. The restaurant’s hours are 10 a.m. to 9 p.m. daily.
Stong, who’d originally hoped to have the Derby store open by November of last year, said that COVID-related delays on construction supplies and equipment slowed the process down, but he’s relieved to finally be opening his second area store.
Though he announced last fall that he’d also found a spot to open a west-side Jersey Mike’s — the former Five Guys space at 2616 N. Maize Road — Stong said at the time that he planned to open in Derby before he turned his focus to his third restaurant.
Now, he said, he’s able to do that. He’s working on getting permits for the west-Wichita Jersey Mike’s space and says he hopes to be able to open it within the next several months.
“We have wonderful customers that ask on on a near daily basis, ‘When will you open in Derby and when will you open on the west side?’” Stong said. “Happily, this week, we can say, ‘Hello, Derby,’ and hopefully we will be on the west side in a matter of months.”
Jersey Mike’s restaurants specialize in hot subs, cold subs and wraps served on freshly baked bread. The New Jersey-based chain is known for a topping called “the juice,” which is a zingy mixture of olive oil and red wine vinegar.
