The Wichita food truck community has lost one of its own.

Troy Evans, who in 2019 opened The Bomb BBQ, died on Tuesday, confirmed the truck’s manager, Denise Watson. He was 51.

Evans’ first career was working as a bomb builder in the 184th Intelligence Wing of the Kansas Air National Guard at McConnell Air Force Base. After he retired, Evans took over a catering business owned by his daughter in Conway Springs and turned it into a food truck.

Evans used his truck to support a nonprofit veterans homeless shelter called Passageways, and since he first opened, he would donate 10% of the proceeds from every food truck job. He also frequently donated food to veterans organizations.

Evans is survived by his wife, Lia, as well as two daughters, two sons and two grandchildren.

The food truck has several events booked throughout the coming months, and a member of Evans’ family said it will strive to keep the truck operating as normal.

Watson described Evans as the best boss she’s ever had.

“He was a genuinely caring, devoted person,” she said. “He devoted every bit of his energy to whatever he cared about, which was everything.”
