Arizona transplants to Wichita are trying to bring the Mexican sushi trend to town

Mexican sushi is a thing in states like California, Arizona and Nevada.

But Wichita is still waiting on the trend.

It might not have to wait much longer. A local family that started a Mexican sushi delivery business as a way to make additional money during the pandemic now is looking for a space to open a small restaurant.

Gabino Barrera, his mother, Leticia Cisneros, along with his sister Gladys, aunt Ruby and cousins Michelle and Jose, are running Sushi Camaroncito Loco out of their home, and for now, it just does delivery.

But they’re looking for a small, affordable space where they could get a restaurant going, he said, even if it’s just carryout or a place with a couple of seats.

They make two types of Mexican sushi rolls, both of which are constructed using fully cooked ingredients. One features carne asada (steak) rolled up with rice, seaweed, cucumber, avocado and cream cheese then deep fried. There’s also a roll that features seafood instead of carne asade, and there’s one that has both.

After the rolls are constructed, they’re deep fried then topped with sauces, Gabino said.

The family started making Mexican sushi rolls after relocating to Wichita from Arizona.

“We were in the mood for some, and there’s no place like that here in Wichita that sells something like that,” he said.

Gabino and his mother both have experience working in restaurants, which has come in handy, he said. But the business has become so popular, they can’t keep up with it from home.

At first, they were selling to just friends and family, and then, word started to spread.

“We had no idea it was going to get this much attention,” he said.

For now, the rolls are all they sell, but if the family finds a restaurant space, they’ll likely expand the menu, Gabino said.

In the meantime, people who want to place an order can message the business on Facebook. The family is mostly delivering Fridays through Sundays, when they have time off from their full-time jobs.
