Wichita is about to get some authentic African food, international fare
When the weather warms up and food truck season gets going, Wichita will have something new to try.
Mary Rager, a native of Africa who has lived in the United States for more than 20 years, is about to open a new food trailer selling African and International dishes. She’ll call it Crested Crane Cafe.
Rager said she’s been working on the trailer since November and hopes to have it ready to go in April.
“I’m just excited to give people something that’s different,” she said.
Rager said she’ll be serving things like African tacos, which she makes on homemade flatbread with shredded chicken, cabbage, sour cream, tomatoes, jalapenos and cilantro.
Plantains, samosas and chicken kebabs will be on the menu, too, as will African potatoes with meat, different casseroles and authentic rice.
She’ll also have Italian and Spanish dishes on her menu, she said, and she’s excited about her Spanish nachos.
“They’re different,” she said. “They’re like you would find on the street there. They’re more authentic.”
Rager said she plans to offer catering and also wants to take her trailer all over town. She’s in the process of figuring out the food truck scene.
