Family-owned Wichita Mexican restaurant with a unique focus is expanding to the south
Wichita is not new to the concept of a birrieria — a Mexican restaurant whose main dish uses goat meat as a protein.
Now, it’s about to get another. Chuyito Raymundo and his nephew Dallas Raymundo are planning to open Chuyito’s Birrieria in Westway Plaza, the giant retail complex at the corner of Pawnee and South Seneca.
They’re taking over the building at 1415 W. Pawnee that most recently held Panda Grill Buffet.
Dallas Raymundo said that the restaurant should be open by March.
The family already has one birrieria in Wichita: Birrieria Raymundo, which is at 124 E. 21st St. Goat is a family favorite, Dallas Raymundo said.
“It’s an authentic Mexican dish, and it’s awesome,” he said. “I would eat it every day if I could.”
The restaurant will have a full Mexican menu and will serve other meats as well, including carne asada. But goat will be the star dish. It will be a sit-down place open for both lunch and dinner, and it will serve alcohol. It’ll also offer hand-made tortillas.
Wichita also has another birrieria called La Nieta De Villa that operates at 2943 S. Hillside.
