Sorry to be redundant, but Wichita is about to get one more Uno Mas.
Those who speak un poco de Espanol know that “Uno Mas” translates to “one more.” And on Tuesday, Abel Rodriguez will open a brick-and-mortar version of the Uno Mas food truck he opened in June 2016.
Uno Mas Fresh Mex will be at 1920 W. 21st St. in the 1,800-square-foot spot near the 21st and Amidon Dillons that once housed a Pizza Hut. It’ll serve many of the same items Rodriguez has made popular on the food truck, including his inventive street tacos, plus a few salads, queso chorizo dip and more. He’ll offer daily specials, and soon, he’ll add frozen margaritas and Mexican beer.
His new dining room has seating for about 30, and his hours will be 10:30 a.m. to 9 p.m. Sundays through Thursdays and 10:30 to 3 a.m. Fridays and Saturdays. Rodriguez said he thinks he’s in a good position to attract late-night, after-bar crowds on Fridays and Saturdays.
Rodriguez, who was the longtime sous chef at Chester’s Chophouse before setting out on his own, always had the goal of opening a stationary restaurant, he said, but he decided to start small with the food truck. It grew faster than he anticipated.
“We’re very busy with that truck, and it has given us the opportunity to expand fast,” he said.
The food truck will still be out on the streets of Wichita being run by Rodriguez’s staff. But he’ll be in the restaurant.
