It stands to reason that if a burger restaurant invents a pizza, that pizza is going to be topped with ketchup, cheese, pickles, onions and Thousand Island dressing.
Popular Wichita restaurant Dempsey’s Burger Pub is the next contestant in Wichita Brewing Company’s pizza-of-the-month contest. Their unusual entry is now on sale at both WBC restaurants – at 8815 W. 13th St. and 535 N. Woodlawn.
Dempsey’s pizza is topped with a red sauce base that’s drizzled with the restaurant’s house made ketchup, American and shredded white cheddar cheese, Dempsey’s house-made pickles, caramelized onions and beef. It’s topped with baby arugula and Dempsey’s house-made Thousand Island Dressing.
They’re calling it The Up-N-Down-Za.
The yearlong promotion was dreamed up by WBC co-owner Greg Gifford, who at the beginning of the year invited me and 11 local restauranteurs to invent a pizza that he’ll serve at both Wichita Brewing Company restaurants throughout 2017. Whichever pizza has the highest sales at the end of the year wins. The prize is a party at the WBC production facility, complete with beer, for the winner and his or her staff.
Dempsey’s burger-turned-pizza will be available through Aug. 31.
