Terry Newman, who sold his Wichita Papa John’s franchise in December, is opening a new restaurant.
Blue River Mexican Grill should be open in the next two weeks at 2431 N. Greenwich Road, right in front of Cabela’s. It’s a build-your-own burrito place that Newman says he will turn into a franchise.
The menu also will include burrito bowls, nachos, quesadillas and tacos made with choice of steak, chicken, carnitas or barbacoa. The restaurant also will serve house-made charro beans cookes with bacon, jalapeno and onion. It also will serve house-made salsa.
“We’re doing our testing right now,” he said. “We pretty much have our recipes locked down, an we’ve been feeding some of the friends and family and contractors. Now, I’m trying to hire as many people as I can.”

Newman said the restaurant will be open daily, likely 11 a.m. to 10 p.m. It won’t serve alcohol.
Newman and and partner Frank Carney still own 14 Hawaii Papa John’s sites.
