Andover restaurant two years in the making is finally ready to open

It’s torture to the tummy when a new restaurant looks finished from the outside but just sits and sits and sits while the owner finishes up unseen work on the inside.

That’s what’s been happening for months in Andover, where the giant new Los Cocos Mexican Restaurant building just outside the Andover Dillons on the southeast corner of Kellogg and Andover has been taunting diners.

But the wait is finally over. Owner Luis Alfaro says he will open the restaurant next Thursday, Dec. 15.

“We been taking forever at this location to get it complete,” he said. “But it's finally done.”

Construction delays are to blame, he said.

The restaurant has been in the works since fall 2014, when Alfaro first announced his plans. He broke ground last fall.

The building is 5,000 square feet and should seat about 170 inside and 25 outside. Alfaro opened his first Los Cocos in 2007 at 1335 N. Tyler. A Derby location, which is at 1257 N. Rock Road, followed in 2011.
