Former Emerson Biggin’s owner Dave Dunn and his business partner, Sean O’Brien, are preparing to open their fourth Billy Sims Barbecue this week, this time in Newton.
“We’re down to the wire,” says Dunn, who plans to open at 1414 N. Main St. on Thursday.
“This one will be our first drive-through addition,” he says.
The restaurant is opening in space formerly occupied by Long John Silver’s, which had the drive-through initially.
“Since it was already here, we thought we’d give it a try,” Dunn says. “This is something that obviously is a plus. It should add to sales.”
The restaurant is named after co-founder Billy Sims, the Heisman winner from the University of Oklahoma who went on to play for the Detroit Lions.
Dunn and O’Brien already have Billy Sims franchises in Andover, Dodge City and Arkansas City. Dunn says they plan to open in Emporia next.
That location, at 737 W. Sixth St., likely will open in October.
Dunn says he’s not sure where they’ll open after that, but he’s says they’re strongly considering Hutchinson and Hays.
“Well, I can’t set still, so I’m sure we’ll look at other markets when the time comes.”
