Jon Jones says there’s a simple reason why he and his wife, Ivy, are opening a coffee shop.
“We just want to do coffee because we love it.”
The two are opening Verita Coffee Co. in 1,500 square feet at 9414 W. Central, which is between Tyler and Maize Road.
“Verita means ‘truth’ in Italian,” Jones says.

So why that name?
“Because we’re going back to the original, pure form of coffee,” he says.
Jones says “we’re not going to do” what he calls “3,000-calorie” drinks filled with syrup that some coffee shops have.
“We specialize in light roast coffee,” he says.
“We’ll do light roast espresso. We also do a hand-crafted chai that we … make ourselves.”
Eventually, Verita will have prepackaged food as well.
Jones says there will several kinds of seating for customers to come and relax with a cup of coffee.
“It’s pub style.”
Look for Verita to open by early March.
