The new Billy Sims Barbecue (Have You Heard? June 25) is set to open Wednesday at the southwest corner of Kellogg and Andover Road.
“We have a lot of barbecue fans in Kansas and I’ve been asked by many to open a location here in Andover for quite a while,” Sims said in a statement.
Dave Dunn, who used to own Emerson Biggin’s, is bringing the concept here. He already has one in Oklahoma City.
Dunn has previously said that Sims, a Heisman winner at the University of Oklahoma who went on to play for the Detroit Lions, is one of his heroes.
The restaurant serves nine types of meat that are smoked on site daily for lunch and dinner.
The quick-casual concept is similar to Chipotle in that customers will walk through a line and choose their meats and sides and then pay at the last stop.
The chain started in Tulsa in 2004. Dunn’s restaurant is the first Billy Sims Barbecue in Kansas and the 44th for the chain.
