There’s yet another chicken restaurant getting ready to open in Wichita, but this one actually announced it was coming to the market more than a year ago — before some of the others were here.
Cowboy Chicken is going to open in June in 3,200 square feet at 3130 N. Rock Road.
“We’re familiar with the area,” says Dave Ryburn, district manager for the Omaha restaurant group that brought HuHot Mongolian Grill to Rock Road in 2008.
FRC Group, which stands for Franchised Restaurant Concepts Group, likes to locate its concepts together.
Plus, Ryburn says North Rock Road “fit the demographics of what we were looking for.”
The “Texas-inspired” fast-casual concept, whose motto is “food as honest as a handshake,” will open in June.
It will offer dine-in and to-go options along with catering and delivery within a 7-mile radius for $3.
Ryburn says the wood-fire rotisserie chicken is made “right in the dining room, right in front of you.”
He says it is hormone-free and GMO-free chicken that is never frozen.
“Everything is made from scratch at Cowboy Chicken,” Ryburn says.
The chain is known for its twice-baked potatoes, which Ryburn says “are kind of like a hash-brown casserole.”
“Chicken enchiladas is also a house favorite.”
Seventy percent of the dishes are gluten free.
The restaurant will be open from 11 a.m. to 9 p.m. daily.
FRC signed a development agreement to open 14 Cowboy Chicken restaurants in Kansas, Iowa and South Dakota.
Ryburn says that could include more in Wichita.
“We’ll wait and see how the (first) Cowboy Chicken does.”
