Steve Gaudreau, who owns Dempsey’s Burger Pub in Clifton Square, now has occupancy of the former Fork & Fennel space and is working on another restaurant concept there.

As Have You Heard? reported last month, Clifton and Oliver LLC recently bought the building at 3425 E. Douglas and Gaudreau will be leasing the space.

“We’re not quite prepared to announce what we’re doing yet,” Gaudreau says.

“We have a concept,” he says. “We have to make sure we can pull it off first. … We’re in the kitchen right now trying to figure things out.”

Gaudreau says he’s taking care of some nuts-and-bolts kinds of issues.

He says there are some restrictions with the space, but Gaudreau says he doesn’t want to make substantial changes that require city approvals.

“Then you get drawn into a quagmire of red tape.”

Most of the changes he makes will be aesthetic ones, such as painting the interior and replacing the floor.

Before he commits to anything, Gaudreau says he wants to make changes and make sure everything will work for his plans.

“I don’t want to get open and then work backwards.”
