Mango Habanero Salsa

2 cups cubed, peeled mango

3/4cup chopped onion

1/4cup white vinegar

1/4cup water

1/4cup fresh lime juice

1 tablespoon olive oil

1/4teaspoon kosher salt

3 yellow or red tomatoes, chopped

1/2to 3 habanero chilies, seeded

Place all ingredients in a food processor or blender. Process until almost smooth. Cover and chill for 2 hours or, for best flavor, overnight. MAKES ABOUT 4 CUPS.
