2 cans of corn, drained
1 can black beans, rinsed and drained
1 jar (16 oz.) chunky salsa
4 or more chicken breasts
Low-fat cheddar cheese (optional)
Combine corn, black beans and 1/2 cup salsa in bottom of slow cooker. Layer chicken breasts on top. Cover with remaining salsa.
Cook on low 6-8 hours. Top with cheese, if desired.
