Another food truck has just rolled out in Wichita.
Urban Skillet is owned by Rian and Travis Brown and had its first public lunch outing downtown at the corner of Douglas and Ohio on Thursday. The truck, constructed in an old bread truck the Browns tracked down in Missouri, will sell items like chicken quesadillas, fish tacos, wrap sandwiches and pulled pork sandwiches. The menu will rotate every two weeks.
Rian Brown is a former assistant director of nutrition services for the Kansas Spine Hospital who said she didn’t realize her passion for cooking until she took the job.
“I’d always cooked at home, but to cook for customers and a client base was new to me, and I loved it,” she said.
She and her husband dreamed of opening a bed and breakfast with a restaurant but couldn’t find the right property. Family members suggested they start with a food truck while their bed and breakfast hunt continued. The truck will be parked at Ferguson Bath, Kitchen & Lighting Gallery at 2222 W. Harry, from 11 a.m. to 1 p.m. on Friday, Sept. 2. It will continue parking at businesses around town for lunch service and hope to join food trick rallies and pop up park schedules next year.
